What makes a biryani actually a biryani
Spoiler: it's not just rice with chicken on top.
Most "biryani" you get from random Toronto restaurants is actually pulao — meat and rice cooked together in one pot, fast, finished. Real biryani is a slow, layered dish. Long-grain aged basmati rice is parboiled with whole spices (cardamom, cloves, bay leaf, cinnamon, mace). Meat is marinated overnight in yogurt, ginger-garlic, mint, fried onions and saffron. The two are then layered raw-on-rice in a heavy pot, sealed shut, and cooked on a low flame so the trapped steam — the "dum" — finishes everything together.
When you crack the seal, the rice has absorbed every spice and fat from the meat below. Each grain stays separate but smells of saffron, ghee and roasted onion. The meat is fork-tender. There's a faint sweet-and-floral note from kewra or rose water if it's a Lucknowi or Kolkata-style biryani. That's biryani.

🌶️ Hyderabadi Biryani
Spicier, headier, deeply aromatic. Saffron-heavy, mint-forward, with a generous slick of ghee. Marinated meat goes in raw and cooks under the rice. The classic, fiery Andhra-style biryani most North Americans know "biryani" as.
🥔 Kolkata Biryani
Milder, lighter, lightly sweet. Each portion has a whole boiled potato and a boiled egg— a Bengali signature. Kewra and rose water lift the aroma. A favourite for guests who don't love heat.

What's the difference between Hyderabadi and Kolkata biryani?+
Hyderabadi biryani is the spiciest and most aromatic — heavy on saffron, mint, fried onions and yogurt-marinated meat, layered raw with rice and slow-cooked dum-style. Kolkata biryani is milder and includes a whole boiled potato and egg per portion, lighter on chili, with a hint of sweetness from kewra and rose water. We make both. Tell us your preference at order.

Yes. All our chicken and mutton is 100% halal-certified. We're a regular catering choice for South Asian Muslim weddings, Eid gatherings and corporate iftars across the GTA.
Do I need to pre-order biryani?+
Yes — we make biryani in trays (5, 10 or 15 servings) and we cook it the same morning fresh. Please call 647-217-2175 at least 24 hours in advance. For weekends and holidays, give us 48 hours' notice when possible.
What sizes do biryani trays come in?+
Three sizes — Small (~5 servings, good for a small family dinner), Medium (~10 servings, typical office lunch), and Large (~15 servings, parties of 12–18). Each tray is served with raita and salad. Multiple trays can be combined for larger events.
What is dum biryani?+
Dum biryani is a slow-cooking method where marinated meat and partially cooked basmati rice are layered together in a sealed pot, then cooked on low heat (often with the lid sealed using dough). The trapped steam — the dum — finishes cooking everything together so the rice absorbs the meat's spices, the meat stays tender, and every grain is perfumed with saffron, mint and fried onions. It's the difference between real biryani and pulao.
